my dear friend Casey and i spent halloween doing what we love most… creating.
we had our 2nd annual pumpkin decoupage party and made pumpkin spice scones from scratch. not only was it lovely spending time with Casey, but we both felt such satisfaction in what we made. we talked about how important it is to cook and make things that you like, things that just make your body feel good. i believe cooking is an art form and i think that’s why i love it so much. it can be challenging, you never really know how it will turn out, sometimes it’s rather abstract, and sometimes is stunning and magnificent! what a way to talk about food, right? but i believe every single one of those things. and this time, making pumpkin spice scones created another one of those artistic moments…
here’s how things went down: i have never made scones before, so this was starting off as a new adventure to me. we didn’t have a recipe- so we began our online search (which is always risky as you never know what to expect from a new recipe). the recipe called for a few things that we no longer had. the cake flour had weevils- those things are incredibly disgusting and looking them up online made it about 1,000 times worse- so that was out in a flash. and the milk was gone- so we had a couple of things to figure out. and of course, this realization occurred after a trip to 2 different stores. you all know the feeling- you’re not going out again. so as you can see, our artsy baking had a rocky start- but we persevered with confidence!
we mixed the dry ingredients (weevil free, thank God), mixed the liquids, combined everything to create the dough, cut our dough pie into 8 slices, and put it all in the oven…
as our scones baked, my house began to smell of pumpkin spice amazing-ness. it was beautiful. Casey and i managed to whip up an icing that include a little bit of heavy cream and water instead of milk. the clock struck time and our delightful scones were about to to make their debut…
a little cinnamon sugar icing to top things off and we had the most incredible scones i’ve ever seen and tasted :)
if only you could smell and take a bite through the computer! these scones were, dare i say- magnificent?! it was not because the triangles were equal and perfect or because the icing was zig-zaged just right. they were magnificent because it was something that Casey and i did together and it was something that we created. it was a process and it was a success. and i think it’s okay to be proud of that. we truly found a great recipe and only had to alter it slightly due to our little… bugs.
here’s the recipe:
*makes 8 scones, so if you’re like me and live with a few other people- you might want to double the recipe :) they go QUICK!
2 c. regular flour
1 1/2 t. baking powder
1/2 t. salt
1/2 t. ground cinnamon
1/2 t. ground nutmeg
1/4 t. ground allspice
1/4 t. ground ginger
8 T. (1 stick) butter
1/3 c. pumpkin puree
1/3 c. heavy cream
6 T. brown sugar
1 t. vanilla extract
directions: preheat oven to 425 degrees. get out a baking sheet and line with parchment paper (not required but makes cleanup easy!). cut the butter into small pieces, put it in a small bowl and put it back in the refrigerator. in a medium bowl, combine both flours, baking powder, salt, and all spices. whisk together well.
in a separate bowl, combine pumpkin, heavy cream, brown sugar, and vanilla. whisk together well. dump the butter pieces into the bowl with the flour mixture. using a mixer or pastry cutter, combine butter and flour mixture until it becomes crumbly in texture.
pour the liquid mixture into the flour mixture all at once. stir with a wooden spoon until everything is just moistened. the dough will be very crumbly, this is the way it should be. turn the mixture out onto the counter and push the pile together with your hands. it should stick together fairly well. knead it just a couple of times until everything is together. don’t knead it too much or the dough will get too sticky.
pat the dough out into a rough circle, 3/4 to 1 inch thick. cut it like a pie (or pizza) into 8 pieces. place pieces on the baking sheet so that they are not touching. bake scones for about 15 minutes at 425 degrees. they should be light brown on the bottom, the tops will darken as they cool.
icing: mix 1 c. powdered sugar with 1/2 t. ground cinnamon, add 1/2 T. heavy cream and 1 1/2 T. water (or 2 T. of milk if you have it!) mix all together and drizzle over scones.

these scones are perfect for this fall season as we start gearing up for thanksgiving (and then christmas!). they would make great gifts and are nicely paired with a warm cup of coffee :)
